This coffee is sourced from Banko Chechele, situated in the Gedeo Zone of Ethiopia's Southern Nations, Nationalities, and Peoples’ Region (SNNPR). The area's unique altitude, fertile soil, and ideal climate provide the perfect environment for cultivating outstanding coffee. Thanks to a long-standing tradition of coffee farming, the local community has established Banko Chechele as a prominent hub known for its well-balanced and high-quality beans.
The cherry selection process is meticulous; every cherry is hand-picked to ensure only the ripest fruits reach the processing station for further sorting.
After selection, the cherries are taken to an anaerobic processing facility, where they undergo a cold anaerobic fermentation. In this controlled environment, the cherries are sealed away from oxygen, allowing precise management of sugar levels, temperature, and pressure. This fermentation process lasts between 7 to 10 days, typically at temperatures ranging from 15 to 18 degrees Celsius, resulting in enhanced flavor profiles.
