Our account manager, Agnese, spent time living and working at the farm in 2023, with a mission to bring this remarkable coffee to New Zealand. Her efforts culminated in competing at the New Zealand Barista Championships, where she proudly showcased the talent and dedication of these producers, making it to the finals.

The producers at Finca Los Nogales are a dynamic group of young siblings and friends who, through dedicated work, research, and innovation, continuously enhance the quality of their coffee and challenge industry standards. They carry forward the legacy of their father, Ricuardo Hernandez, the first COE winner from Colombia. With Oscar's commitment to environmental sustainability, Angie’s expertise in industrial engineering and microbiology, and Anibal’s mastery in quality control, they have crafted some remarkable coffee lots, and we are incredibly proud to present one of them as our Black Label!

This Typica lot was harvested during the mid-2024 season at an elevation of 1900 masl. After being disinfected, the beans underwent a thermal shock process involving immersion in both hot and cold water, followed by a 120-hour fermentation. During this fermentation, the yeasts were fed with additional sugars, including panela (sugar cane) and mosto (coffee cherry juice). This meticulous process has resulted in an exceptionally complex flavor profile, featuring notes of tropical fruits, berries, and dark chocolate.

here's how we do it. we recommend a ratio of 60g of freshly ground coffee for every litre of water. this is a good place to start, but you can fine-tune your recipe to suit your taste. you'll find some suggested brewing ratios of hot water to ground coffee for you to use below. if you have any questions, flick us a message - our team can happily help.
